Super Citrus Gin, Soft Lemon, Ylang Ylang, Soda

This has been on our classic cocktail menu for a long long time now, its one of the first classics we started looking at perfecting. Taking the original idea for the drink to its extreme, while still staying true to the origins was the what we aimed for here.

We distill a Super Citrus Gin as the base for this, using salt preserved waste citrus. To that we then add our lactic lemon cordial, and then two essential oils, one from Ylang Ylang and the other from May Chang. 

These two oils help dry out the sweetness in the drink, and add layers of additional lemon flavour, without just being lemony.
